If to you, summer means cooking on the grill, then I think we’re one step closer to becoming best friends. Once that warm weather hits, I’m basically throwing every food from our kitchen onto the grill and seeing what happens. Most things turn out great, some things are pretty questionable, then other things are absolutely freakin’ killer like this Mexican Street Corn.
I’ve never actually made corn on the grill before, so this was an entirely new experience for me. But it was super simple! You lay the corn cobs directly onto the grates and flip them every couple minutes until each ear of corn has those picture-perfect grill marks all the way around. It never hurts to be eating pretty food! Plus, I’d give it about a 7 out of 10 on my healthy scale, so it’s also pretty much guilt free for bikini season. Win, win!
- 5 Ears of Corn
- ½ cup Mayonaise
- 2 Tbsp Sour Cream
- 4 oz Cotija Cheese
- ½ cup Chopped Cilantro
- ⅓ tsp Garlic Salt
- 1 tsp Chili Powder
- Juice from 1 Lime
- Heat grill to 400 degrees
- Remove the corn from the husks
- Place corn directly on the grill grates
- Grill about 2-3 minutes per side until kernels get grill marks
- Turn corn and repeat until all sides are browned
- While grilling, mix mayonaise, sour cream, cotija cheese, chopped cilantro, garlic salt, chili powder and lime juice in medium mixing bowl
If you have any trouble finding Cotija cheese, you can substitute it with Parmesan or Romano cheese. But both of my Walmarts had it, so it shouldn’t be too hard of a find. I’d definitely suggest Cotija cheese over any other type of cheese because it has extra salt and a tangier flavor than any type of cheese I’ve ever had. It’s a dry grating cheese that just crumbles apart and melts in your mouth. Worth the extra hunt, I’d say.
Also, if you’re not a fan of heat you can use Paprika instead of the Chili Powder. However, with the portion size in my recipe, it wasn’t spicy at all.
